Eating in Beaune

Eating in BurgundyOne of the best things about Burgundy is the restaurants. The regional cookery of Burgundy is not grandiose or fanciful. It is country cooking of the most sumptuous kind and full of flavour. It is based on generous servings of meat and poultry, fish or game served on fine large dishes, most often surrounded by wine rich sauces. Famous recipes include boeuf bourguignon, coq au vin, chicken in chambertin, ham in pommard, ham fried in wine, pork chops sautéed in white wine, jambon persille (a ham terrine in parsley glaze), la pouchouse (a soup of fresh water fish, garlic and white wine), cheeses such as epoisses. This is just the tip of the iceberg. To appreciate burgundy at its best there is no doubt that it should be drunk with food. If you are ever in Beaune or nearby I would heartily recommend the following:

Small cave, great regional cooking, sit at a long communal table or individual tables and choose your wine from the shelves, paying sensible corkage
