Pierre Paillard

Monsieur Paillard is passionate about champagne. He is a small producer whose commitment and skills rival, match and sometimes outstrip the more famous names in Champagne. Good terroir is an absolute necessity for producing high quality champagne and the Paillard vineyards in Bouzy are all designated Grand Crus. This area is considered by many to grow the region’s best Pinot Noir. He is also a patient man, as the best champagne needs to be aged for much longer than the legal writ of sixteen months. His current non-vintage, a blend of the 2003 and 2004s, is aged for at least three to four years and the vintage for six+. This makes the wines more rounded and balanced than younger ones and removes the austerity, a characteristic disliked by many people. In the 2002 edition of his guide to Champagne, Tom Stephenson placed the non-vintage at equal fifth in the top hundred.

Domaine Pierre Salabelle & Fils

The Salabelle’s have been making wine here since 1845 as the Gaul’s did many Centuries’ before them. This area is really the southern Rhone around the upper Drôme Valley, a high valley on the fringe of the Alps, sheltered by the cliffs edging the Vercours plateau, and famous for its “Resistance” hideout.                  The “ Traditional  method” is, to use Muscat à petites Grains hand harvested at about 10.5% potential alcohol, the grapes are pressed and allowed to partially ferment at a very low temperature of 2 degree’s until the end of the year. The wine is then bottled with a degree of natural residual sugar and a second fermentation takes place during 4 to 5 months until it stops naturally still containing some sweetness. The next stage is totally unique to this region where the bottles are de-corked and at the same time the bottles are washed the wine is filtered and then rebottled all within a few minutes. The resulting wine is a full sparkling beautifully fruity wine at an amazing 8% vol.  A truly remarkable fizz in every way.
